🧾 Ingredient notes

Ingredients needed to make vegan mushroom gravy.

Extra Virgin Olive Oil: You can also use alternatives like Vegan Butter, coconut oil, or even avocado oil for a slightly different twist in flavor.

Onion and Garlic: You can use garlic and onion powder for a quicker option (about ¼ to ½ teaspoon of each as a substitute for one fresh clove or onion).

However, the flavor truly shines when you use fresh garlic and onions. It's worth the extra effort for that extra deliciousness!

Mushrooms: I've used cremini mushrooms to make this recipe, but you can also experiment with other types of mushrooms like white button mushrooms, portobello mushrooms, or shiitake mushrooms.

Don't be afraid to get creative!

Thyme: If you don't have thyme on hand, feel free to omit it or substitute it with other fresh or dried herbs like rosemary, oregano, or basil to suit your taste preferences.

All-Purpose Flour: You can substitute it with whole wheat flour, which adds a nuttier flavor and a bit more nutrition.

For a gluten-free option, consider using a gluten-free flour blend, rice flour, or cornstarch.

Vegetable Stock: My preferred choice, but if you want to explore different flavors, you can use mushroom stock for an even more intense mushroomy taste.

Alternatively, there are vegan broths available that mimic the flavors of chicken or beef, offering a wide range of options to suit your flavor preferences.

See the recipe card below for a full list of ingredients and measurements.

📋 Variations

  • Wild Mushroom Gravy: Experiment with a mix of wild mushrooms like chanterelles, porcini, and morels to elevate the earthy flavors.
  • Creamy Herb Infusion: Add a blend of fresh herbs like 1 teaspoon of thyme, 1 teaspoon of rosemary, and 1 teaspoon of sage for a herbaceous twist to your gravy.
  • Spicy Mushroom Kick: Introduce a bit of heat with a pinch of red pepper flakes or ¼ teaspoon of cayenne pepper for a spicy mushroom gravy.
  • Luscious Cream Addition: Make it even creamier by stirring in approximately ¼ cup (60 milliliters) of coconut cream or cashew cream for a luxurious touch.
  • Umami Boost with Miso: Enhance the depth of flavor with 1-2 tablespoons of miso paste, giving your gravy a delightful umami kick.

💭 Expert tips

  1. Mushroom Mastery: Take your time sautéing the mushrooms until they turn golden brown. This step enhances their rich, umami flavor, elevating your gravy.
  2. Customized Consistency: Adjust the amount of liquid and simmering time. Longer simmering yields a thicker consistency, while shorter simmering results in a thinner one.
  3. Adjusting Thickness: If your gravy becomes too thick, simply whisk in a bit more stock until it reaches your desired consistency. Taste and adjust the seasoning as needed.
  4. Correcting Thin Gravy: If your gravy is too thin, make a roux with 1 tablespoon of oil and 1 tablespoon of flour in a skillet. Whisk it into the gravy until it thickens.
  5. Straining for Smoothness: For a silky-smooth texture, strain the gravy through a fine-mesh sieve or cheesecloth. This step removes any remaining lumps or herb bits.

❓Recipe FAQs

How long can vegan mushroom gravy last in the fridge?

It can typically last in the fridge for about 3-4 days when stored in an airtight container.

It's important to refrigerate it promptly after it has cooled down to room temperature to ensure its freshness.

If you have any doubts about its quality or safety, it's advisable to use your best judgment or conduct a smell and taste test before consuming it.

If you need it to last longer, consider freezing portions of the gravy for extended storage.

Can I freeze vegan mushroom gravy?

Of course! You can freeze it for up to 2-3 months. To do this, allow the gravy to cool to room temperature, transfer it to a freezer-safe container, and remove any excess air before sealing.

Label the container with the date for reference. When you're ready to use it, thaw it in the refrigerator overnight and reheat it on the stove or in the microwave, stirring for a smooth consistency.

Adjust the thickness with a bit of vegetable broth or water if needed.

How do I reheat vegan mushroom gravy leftovers?

Reheating gravy leftovers is easy! Here's how you can do it:

Stovetop: Reheat the gravy in a saucepan over low to medium heat, stirring occasionally. Adjust thickness with broth or water if needed, and heat to your desired temperature.

Microwave: Place the leftover gravy in a microwave-safe container. Heat it in 30-second intervals, stirring between each, until it's as warm as you'd like. Be cautious to avoid splattering.

Double Boiler: If you have one, you can use a double boiler to reheat the gravy gently. This method is especially useful if you want to maintain the gravy's original consistency without risking overheating.

Oven: For larger portions, reheat gravy in an oven-safe dish covered with foil at a low temperature (around 300°F or 150°C) until warmed through.

Can I make it gluten-free?

Yes, you can by substituting the all-purpose flour with a gluten-free flour blend or another gluten-free thickening agent of your choice.

Some common gluten-free alternatives include rice flour, cornstarch, or potato starch.

What should I serve vegan mushroom gravy with?

It is a versatile condiment that pairs wonderfully with many dishes.

It's perfect for drizzling over Vegan Mashed Potatoes, Vegan Meatballs, Vegan Shepherd's Pie, Vegan Biscuits, steamed or roasted veggies, and holiday feasts.

Its rich, savory flavor enhances a wide range of plant-based meals, making it a must-have in your kitchen.
