Bruschetta is an Italian dish made with natural Mediterranean ingredients. This is probably one of the easiest bruschetta recipes you'll ever prepare, but it’s still very tasty and extremely good.

It is a super simple recipe perfect to enjoy as an appetizer before lunch or dinner. To make it you only need inexpensive and easy-to-find ingredients, as well as toasted bread.

Besides, you can customize it with your favorite spices and herbs, or even change or add anything you have on hand. And it is a super refreshing and healthy dish because it's made with whole ingredients!

Bruschetta, a traditional Italian recipe that requires 8 ingredients and 15 minutes. It's easy to make, simple, and completely delicious! Feel free to serve it during a party or a family dinner.

How to make bruschetta - Step by step

Step-by-step photos of how to make bruschetta
  • Combine the tomatoes, onion, garlic, basil, salt, pepper, and oil in a large mixing bowl (photo 1).
  • Use a bread knife to slice the bread on the diagonal, making ยฝ or ยพ inch thick slices (about 1 to 2 cm) (photo 2).
  • Toast the bread. I always use a griddle but feel free to use a grill pan, a skillet, a toaster, the oven, etc (photo 3).
  • Place the bread on a platter and top with the tomato mixture (photo 4).
  • Serve immediately.

Pro tips

  • If you’re oil-free, replace the oil with some lemon juice or balsamic vinegar.
  • Add more oil if you're looking for a stronger flavor.
  • Any kind of tomatoes will do.
  • Add any spices or herbs (fresh or dried) you want.
  • Feel free to use any type of bread you have on hand, but keep in mind that not every type of bread is vegan.

What is bruschetta?

Bruschetta is an Italian antipasto consisting of grilled bread topped with olive oil, garlic, salt, and other Mediterranean ingredients. It's very light but filling, as well as nutritious and delicious.

This recipe is a great appetizer to serve at a party or a picnic. You can either add the tomato mixture on top of the bread before serving or just let the guests do it themselves. Anyways, it's a perfect summer recipe!

How long will the bruschetta mixture keep?

The tomato mixture contains fresh and natural ingredients, so if you have any leftovers keep them in an airtight container in the fridge for 1 or 2 days.

However, if you want to prepare more of this recipe, I'd recommend you toast the bread right before serving, as it will have the perfect crispy texture and won't get soft and mushy.

What to do with the bruschetta leftovers

With the leftover tomato mixture, you can make plenty of different recipes. Serve them with dishes like seitan, add it to some vegan tacos and vegan burrito, or even mix it with sauteed kale to give it some more flavor.

Instructions

  • Combine the tomatoes, onion, garlic, basil, salt, pepper, and oil in a large mixing bowl. Feel free to add more or less oil. Set aside.
  • Use a bread knife to slice the bread on the diagonal, making ยฝ or ยพ inch thick slices (about 1 to 2 cm).
  • Toast the bread. I always use a griddle but feel free to use a grill pan, a skillet, a toaster, the oven, etc. Some people add some oil to the bread before toasting it, but I think that's not necessary.
  • Place the bread on a platter and top with the tomato mixture.
  • Serve immediately and toast the bread right before serving.
  • Best when fresh, you can keep the tomato mixture in the fridge in an airtight container for 1 to 2 days and use it on recipes like seitan, vegan tacos, vegan burrito, or even sauteed kale.

Notes

  • If you’re oil-free, replace the oil with some lemon juice or balsamic vinegar.
  • Add more oil if you're looking for a stronger flavor.
  • Any kind of tomatoes will do.
  • Add any spices or herbs (fresh or dried) you want.

This was very good, I used Roma tomatoes that I seeded and chopped finely, let that sit in a colander to drain a bit while preparing the rest of the ingredients. I also added 1/2 tbsp balsamic vinegar for a little kick. Delicious
