Baked Apples

Baked apples, made with only 5 ingredients, and naturally sweetened. They're low in fat, so healthy, and an absolutely delicious dessert!

I remember my mother making baked apples during fall and winter when I was younger. She would create a super cozy and comforting environment in the house and the kitchen smelled so good, like cinnamon and fruit. It was perfect for the sweater-weather evenings!

This recipe is extremely simple and so easy to make. It's oil-free and low in fat, so it's healthier than the original one, which usually contains lots of refined white sugar. For this version, I used natural sweeteners and added some vegan ice cream.

Besides, you can customize it and incorporate any ingredients or spices you want to. I love how it tastes with just maple syrup, cornstarch, lemon juice, and ground cinnamon, but that's up to you!

How to make baked apples - Step by step

  • Preheat the oven to 350ºF or 180ºC.
  • Peel and dice the apples (photo 1).
  • Add the apples and all the remaining ingredients to a large mixing bowl (photo 2) and mix until well combined (photo 3).
  • Transfer to a baking dish (I used an 8×8 inch or 20x20 cm baking dish) (photo 4), cover with foil and bake for 45 minutes.
  • Then remove the foil and bake for another 15 minutes.
  • Serve immediately.

Pro tips

  • Feel free to use any type of apples for this recipe.
  • Although I prefer to use a little bit of a natural sweetener such as maple syrup, any other kind of sweetener will work too.
  • You can add any type of cornstarch.
  • Nutmeg and ginger would give your baked apples an amazing flavor, but I like them better without them.
  • I used homemade vegan vanilla ice cream, but feel free to get it at the store instead.

How long will these baked apples keep?

Although this recipe is delicious and you most likely won't have any leftovers, if you have any I suggest you keep them in a sealed container in the fridge for 3-4 days.

Will these baked apples turn brown?

If you cut them way before you bake them, they will probably oxidize. However, if you prepare them and put them in the oven right away, they won't. Once you cook them, they will turn golden.

How to serve baked apples

My favorite way of serving baked apples is with some homemade vegan vanilla ice cream and a little bit of Vegan Whipped Cream. I LOVE how the ice cream melts over the apples and the contrast between warm and cold.

However, you could also serve your baked apples with any other kind of vegan ice cream, such as banana ice cream, although I prefer the vanilla one.

Ingredients  

  • 3 medium apples, I used red apples, but any type will do
  • 2 tablespoon maple syrup
  • 2 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • ยฝ-1 teaspoon ground cinnamon

Instructions 

  • Preheat the oven to 350ºF or 180ºC.

    This sounds like chunky apple pie filling. My wife is not a big fan of apple peel so does not care much for conventional baked apples. We will try this, probably with ice cream.
