But don't worry if you don't have one, use whatever bread you have on hand. Italian bread, ciabatta, or even a simple sandwich loaf will work great too.

Vegan Butter: Softened vegan butter mixes easily with the garlic and parsley, and melts beautifully into the bread. However, if you don’t have vegan butter, olive oil works well too.

Step 2.  In a bowl, combine the vegan butter, garlic, parsley, and salt until the mixture is fluffy.

Step 3. Spread the butter mixture inside the cuts on both sides of the bread and spread any remaining butter on top of the loaves.

Step 4. Wrap each loaf in foil and bake for 15 minutes or until golden and toasted.

    This is delicious. I have two variations, based on my Napolitan grandfather's practice. First, try substituting olive oil for the butter. Second, splash a bit of red wine vinegar and some black pepper on after baking.
    Grandpa loved this, and it's the only thing I ever saw him cook for himself.
